Sunflowers gained popularity in Ukraine in the 18th century. The Orthodox Church banned the use of butter and lard during Lent.

However, sunflower oil was a recent discovery and was not included in the ban. This resulted in a significant increase in sunflower farming, as it became the main source of fat during religious fasting periods.
